Waffles for breakfast? For many, the mostly heart-shaped pastry is rather an exception. Conventional waffle recipes usually do not do without an abundant amount of sugar and butter and therefore have a handsome amount of calories and fat. Lisa Marie Schweizer has created two recipes that are not only delicious but also fit into her diet. Whey, for example, provides the necessary amount of protein in the waffles, and instead of commercial sugar, the weightlifter uses dates to sweeten the pastries. Dates thus provide the body with sufficient quickly available carbohydrates in the morning and are thus also suitable as a pre-workout meal.
The waffles are topped with granular cream cheese, Skyr, jam and nut puree or protein chocolate cream and banana. “With the combination of granular cream cheese and homemade jam, the waffles taste even better to me than ordinary waffles with Nutella. The waffles are also healthier and richer in protein. They are not heavy in the stomach, so I have even taken them to competition. And honestly, who doesn’t like to start the day on a Sunday with healthy and delicious waffles?”
These waffles may well land more often on the breakfast table.
Vanilla Cinnamon Protein Waffles
INGREDIENTS
For about seven heart waffles
- 7-12 dried dates (pitted)
- 350 ml milk, cereal or nut milk
- 1 tsp almond paste
- 3 eggs
- 150 g spelt flour (type 630)
- 50 g Vanilla Cinnamon Whey (or Vanilla Whey + Cinnamon)
- 1 pinch sea salt
- 1 tsp baking powder
- if necessary 15 g chai powder (sugar-free)
Lisa’s Topping Recommendations:
- Grainy cream cheese + skyr + jam (preferably homemade) + nut puree
- Protein chocolate cream + banana
How it works
1. puree the dates in a blender with milk, almond paste, and eggs.Mix the date milk with the remaining ingredients.
Preheat the waffle maker and grease with coconut oil if necessary.
4. place the batter in the preheated waffle maker and let it bake to your liking.
5. put toppings on the waffles and taste.
Cocoa date protein waffles
