If you thought zucchini can only be used in savory dishes, you’re wrong. The vegetable with the green peel is also great for porridge and has many advantages. “At first, I also thought, zucchini for breakfast? That can’t taste good!
But then I tried it and fell in love with it straight away,” enthuses Milena Thiele about her porridge variation. However, the 19-year-old only uses this type of porridge when she is preparing for a weightlifting competition and still has to lose weight for her weight category. “With the zucchini, the porridge has more volume but few calories and I still have a full stomach. I’d love to eat it every day, but on normal training days I need a little more energy,” Thiele smiles.

INGREDIENTS
For 1 serving
- 40 g oatmeal
- 120 g zucchini
- 30 g protein powder (taste of choice)
- 100 g lean quark
- 40 g raspberries and blueberries each
- 80 g apple pulp
- Muesli to top
- 1 pinch cinnamon
How it works
1. Grate the zucchini finely2. Bring the zucchini to a boil together with 200ml of water, oatmeal, protein powder and lean quark in a saucepan and simmer for one to two minutes at a low level.
3. Fill everything into a bowl and top with the berries, apple paste, muesli and cinnamon.
